Experience making kimchi for the second time with King Sejong Institute Center (KSIC)
On Thursday 17 December 2020, the King
Sejong Institut center (KSIC) in the city of Jakarta, Indonesia held an event,
namely the experience of making kimchi, in a previous article I had explained
about making kimchi whose main ingredient is Sawi putih, and this time it was
kimchi which I For there are three types, namely Radish Kimchi, Cucumber kimchi
and of course Sawi Putih kimchi, because in Indonesia it is still a corona
pandemic situation, all of us who are present at this event are very obliged to
obey the rules that have been made to always wear masks and keep a distance to
provide safety to those of you. other.
In this event we are also provided with
rubber gloves, masks, Appron, and cloth to cover our heads so that when making
kimchi, our hair does not fall into the food which causes it to be unhygienic,
of course I participate in this event not alone but with two of my friends who
we are. Same as Honorary reporters !, before the show started, we all got an
explanation about kimchi.
Kimci is a traditional Korean food, a
type of fermented pickled vegetables with spicy seasoning. After being salted
and washed, the vegetables are mixed with a spice made from krill shrimp, fish
sauce, garlic, ginger and red chili powder.
Kimchi is actually no different from
pickles which are usually served with fried rice or martabak, which has a salty
and sour taste. It's just that, the taste of kimchi is much stronger coupled
with the spicy taste of chili powder.
One serving of kimchi (100 grams)
contains 7 grams of carbohydrates, 17 calories, 3 grams of fiber and contains
no fat. Popular fermented foods contain probiotics, which are good bacteria for
the digestive system. Apart from containing probiotics, kimchi also contains
chlorophyll, phenols, carotenoids, and vitamin C. All these kimchi nutrients
provide benefits for the immune system and skin health. Vitamin C can encourage
a stronger immune system to fight infection. Kimchi comes from mustard greens.
This vegetable is included in the cruciferous vegetable class, which is a group
of vegetables that contain anticancer compounds.
The first kimchi we make is Sawi Putih
kimchi, the ingredients needed are the same as making kimchi in general, namely
chicory, chili powder, soy sauce, garlic, ginger, leeks, chives, salt, sugar,
glutinous rice water. First of all, of course, soak the chicory in water with
salt for 4 hours with the aim of making the cabbage wilt quickly and not hard,
while waiting for 4 hours, we make the spices to be rubbed on the chicory
later.
First, enter the chili powder into a
large container, then add salt, sugar, soy sauce, and glutinous rice water,
then stir everything until everything is evenly mixed and completely perfect,
when it's finished add the leeks and chives that have been thinly sliced into
the previous container then stir again until everything is well blended, then
add the grated garlic and ginger then stir again evenly and perfectly.
Chicory that we have soaked in salt
water for 4 hours then rinse and wash thoroughly, the spices we made earlier
then apply per sheet to the chicory that we have prepared and all parts must be
exposed to the spices that we have made, when everything is done. well mixed
then put it in the container, and it's done.
Next to make radish and cucumber kimchi,
for a while from the manufacturing process everything is the same from these
three kimchi, and the ingredients are the same so there is no difference, what
makes the difference is the main ingredient, the first is cabbage, if we want
to make radish kimchi, then mustard greens We can replace the white with
radish, or we don't want radish, but if we want cucumber, that can also, and
depending on what kind of kimchi we want to make. There is no change from the
spices.
It was a very exciting experience when
participating in this event, I just found out about the types of kimchi, and it
turns out there are many too, so far I thought that kimchi was only made from
chicory but apparently not, there are many food ingredients that can be made
kimchi, one of which is radish and cucumber.
