Tteokguk (Rice Cake Soup) Typical South Korean Winter Cuisine Ready to Warm Your Day!

Tteokguk or what is also known as rice
cake soup. The word guk in Tteokguk itself means rice cake. Tteokguk contains
tteok (glutinous rice cake) coupled with beef, chives, and fried egg covered in
a special warm and refreshing sauce. Later the tteok cake will expand when
poured using the hot sauce. Usually this Tteokguk is consumed by the Korean
people during Seollal or Korean Chinese New Year. Not only that, but Tteokguk
is usually enjoyed on Daeboreum which is the day of the first full moon
celebration after New Year's Day, you can still consume this warm Tteokguk on
weekdays, usually served with mandutguk or mandu soup.

INGREDIENTS:
300 g ready to use tteok, thinly sliced
60 ml chicken egg white
2 spring onions, thinly sliced oblique
BROTH:
1½ l of water
350 g of inner thigh beef, cut into 2 cm
cubes
6 garlic cloves, finely chopped, saute
BUMBU:
2 tablespoons fish sauce
1 tsp olive oil
1 ½ teaspoon salt
½ teaspoon ground black pepper
OMELET:
2 tsp vegetable oil
2 chicken egg yolks, stir with salt
½ teaspoon salt
SPRINKLED:
3 sheets of nori, thin scissors
lengthwise 5 cm
HOW TO MAKE:
Soak the tteok slices in cold water
until used, so they don't stick together. Set aside.
Broth: Bring the water and beef to a
boil. Turn down the heat. Add the garlic. Cook until the meat is cooked (20
minutes). Strain the floating fat. Add seasonings, mix well. Cook until the
meat is tender.
Add tteok, cook until tteok is cooked (8
minutes). Enter the egg white, stir until the egg white is stringy. Enter the
scallions, stir for a moment. Lift.
Omelet: heat the oil in a square,
nonstick skillet. Pour the egg yolks, flatten, cook until cooked. Roll up.
Lift. Thinly sliced. Set aside.
Arrange the tteok in a serving bowl.
Flush with broth and filling. Add the egg slices and nori. Serve warm.
Tip:
- Tteok is a cake made from cereals,
especially rice or sticky rice. Tteok can be made by steaming, pounding,
boiling, or sautéing. Tteok is also made in a variety of flavors for
celebratory days. Even though it is cooked, tteok will not turn tough so it can
be used for a variety of stir-fry and fried dishes.
- In Korea, Chinese New Year is called
Seolnal, which means every citizen gets one year old. According to tradition,
they will eat a bowl of hot soup called Tteokguk, to symbolize their growing
age. Therefore, if you want a long life this New Year's soup must be eaten
until it runs out. Tteokguk is also commonly eaten on birthdays. Tteok, which
is the main ingredient, is round and long and then thinly sliced, then cooked
with beef or chicken broth.
