Garak Guksu (Noodle Soup), a noodle-based dish to warm you up during winter in South Korea!

 

South Korea or which is often called the country of ginseng is one of the tourist countries which each year has an increase in the number of tourists, especially foreign tourists. One of the reasons that make people of the world flock to vacation to South Korea apart from its entertainment is because the culinary is known to be unique, interesting and has an amazingly authentic taste. If you are going on vacation to Ginseng Country soon, then you need to try this winter food, namely garak guksu.

Garak Guksu (Noodle Soup), a food that is ready to warm winter in South Korea, one of which is Garak Guksu or noodle soup. This Garak Guksu is a thick white or yellow noodle made from wheat. This noodle soup may have a shape and style similar to udon. This noodle soup is stewed in malgeun-jangguk. The sauce uses soy sauce added with beef broth. Usually Garak Guksu is served with fried eggs and also eomuk or fish cakes. Try to taste Garak Guksu and get warmth!

For Korean people and their culture, this guksu is one of the special menus in special moments because ancient people associated thin and long noodles with longevity so they often serve this guksu menu on birthdays to wish for long life. and also at weddings to ask for a lasting marriage. The guksu menu that I made is a bit different from the way it was made, and we can also add cooked eggs and beef to complement it. To make the guksu better, prepare the anchovy stock and the spicy kimchi mixture first and then prepare the noodles so that afterwards we can immediately prepare them so that the noodles won't expand when enjoyed.

Because at times like this you can't go to Korea there is still an outbreak of the Covid-19 virus, you can still make this food at home and also learn to cook South Korean food!

The ingredients below are prepared to make 2 servings of guksu:

• 10 ounces of thin wheat noodles

• 1 tablespoon of sesame seeds

• 1 sheet of seaweed or kim

• 2 boiled chicken eggs

Materials for the anchovies:

• 14 glasses of water

• 8 ounces of radish, thinly sliced

• Leeks as much as 4 stems

• 2 medium sized onions, chopped

• 20 pieces of anchovies, dirt and head removed

• Salt to taste

 

Ingredients for the spicy kimchi mixture:

• Leeks as much as 4 stems

• 4 ounces of kimchi, cut into pieces

• 2 tablespoons of Gochujang

• Honey as much as 1 teaspoon

• 2 teaspoons of sesame oil

The steps for making guksu are as follows:

1. To make the anchovies, first we mix the water, radish, leeks, anchovies and onions into a saucepan then cover and cook over medium heat for 30 minutes. Then reduce the heat and cook for about 20 minutes. After that, add enough salt then turn off the heat and this sauce can be used to serve about 5 servings. Set aside.

2. Next, prepare the spicy kimchi mixture by mixing all the ingredients together and evenly. Set aside.

3. Then we prepare the noodles by boiling 10 cups of water and then put the noodles in the boiling water. Cook until the noodles are cooked and ready to be removed and drained. Doused with cold water then set aside and divide into two bowls.

4. Pour the soup into the bowl of noodles, then add the spicy kimchi mixture and also the seaweed flakes into the bowl.

5. Add the boiled egg on top, the guksu is ready to be served and enjoyed.
