Tteokguk Typical South Korean food when seollal
When
celebrating Seollal or Korean New Year, there is one menu that is considered
mandatory to eat. The food is tteokguk, aka rice cake soup. "Tteokguk is a
Korean specialty at New Year's time. Made from rice cakes, beef, eggs, and
vegetables,"
tteokguk
is generally made from boiled water for beef, chicken, pork, partridge, or
seafood which is added with Korean ganjang sauce. After cooking, the broth is
then filtered until it is clearer.
Furthermore,
Jeon said, the garaetteok (a type of oval rice cake) is thinly sliced and
boiled in the broth. Before serving, you can add vegetable garnish, egg, or
spring onions and add sesame oil according to taste.
There
are several types of tteokguk. One of them is saeng tteokguk or nal tteokguk
from Chungcheong Province. This food is a mixture of non-glutinous rice and
glutinous rice which is formed into small circles or rolled into garaetteok
which is shredded and put into soup.
Other
types are joraengi tteokguk from the Kaesong region, gon tteokguk from Jeju
Island, and ttenduguk. Whatever the type of tteokguk, Jeon says, the menu is
definitely seol-eumsik (a term for all kinds of food served at Seollal). Korean
society considers every Seolla to arrive as if it were a birthday. "Eating
tteokguk means one more year. In Korea, the age is calculated at the beginning
of the year,"

material
400g, Garaetteok, 200g beef (brisket)
Beef
seasoning:
1
teaspoon soy sauce
1/2
teaspoon finely chopped garlic
1
tsp sesame seeds
1
tsp sesame oil
1/4 tsp pepper
Spices
for gravy:
1
spring onion
50g
turnip
1
teaspoon soy sauce
5 cloves of garlic
Cooking
garnishes:
2
chicken eggs
1/4 teaspoon salt
Additional
seasonings:
1/2
tsp pepper
1
tsp sesame seeds
1 tsp sesame oil
How
to make
1.
Garaetteok is sliced crosswise and then cleaned and filtered

After removing the blood by soaking the meat in cold water for 20 ~ 30 minutes,
then boiling it with 1 liter of water. After the foam appears, turn off the
heat and rinse with cold water. The water used is removed.

Boil beef in 1 liter of water again with spices (green onion, radish, soy sauce
for soup, garlic) for 1 hour over medium heat. Cooled cooked meat and filtered
sauce.

Make a white and yellow omelet. Cut the green onion round and thin.

Shredded boiled and seasoned beef.

Add the Garaetteok slices when the sauce is boiling. After the Garaetteok
slices float, reduce the heat to medium and cook for another 3 minutes.

Transfer the Tteokguk to a bowl then place the seasoned beef, white and yellow
omelet and green onion on top.
